Vegan Chocolate Salami Log
Ingredients
- 60 grams vegan plain vanilla cookies
- 150 grams milk or dark chocolate
- 1 tablespoon almond butter
- 1 tablespoon maple syrup
- 1/4 cup coconut cream (thick part only)
- 25 grams pistachio nuts (chopped)
- 25 grams hazelnuts (chopped)

Method
- Melt chocolate in a saucepan over a boiler.
- Once melted (turn off the stove and leave to boil over the pan of hot water) add in the almond butter, maple syrup, and coconut cream and mix if it starts to harden a bit turn saucepan back on.
- Take off the heat and add in the vegan biscuits crushed up, and the nuts
- Mix until well combined
- Lay out a sheet of glad wrap and place the chocolate mix on the gladwrap closest to you leaving about 10cm of space at beginning of glad wrap.
- Slowly roll up your chocolate twisting the sides as you go. Keep rolling nice and tight
- Place in fridge for several hours to set firm
- Slice straight from the fridge and then place back in refrigerator
